We miss Rocky!

A couple of weeks ago our God Son, Roxas spent 4 days with us. His name is Roxas but my family loves to call him Rocky. We miss Rocky and can't wait to see him again.

He feel asleep in my arms. Awwwwww...

This is the only time he was quiet and still when he was asleep, so I got to snap plenty of pictures.

Apple Dumplings

Last Friday I had a Doctors appointment and let's just say it did not go too well. All the weight that I had previously lost let's just day I gained it all back :( Heart breaking I know! I burst into tears at my doctors office. Thank God DJ was there with me because I really need his encouragement and support.

My doctor said I no longer can eat anything sweet. No cake, No cookies, No Ice cream! Nothing sweet at all! I knew before I started this no sweets diet I needed to cook something sweet this one last time. 

For weeks now I've been saying I was going to make some Apple Dumplings from The Pioneer Woman Cookbook. My new favorite cook book :o)

I was planning on doing a step-by-step to show you each step but after cutting and rolling the apples I realize I haven't been taking pictures :( Sorry Ladies I know a lot of you tell me you like step-by-step pictures but I promise to get better

Apple Dumplings

2 Granny Smith Apples
Two 8-ounce cans crescent roll dough
1 cup (2 sticks) butter
1 1/2 cups sugar
1 1/2 teaspoons vanilla extract
One 12-ounce can Mountain Dew
Ground Cinnamon to taste
Vanilla or cinnamon ice cream

1. Preheat the oven to 350 degress
2. Peel the Apples
3. Core them and cut into 8 equal wedges
4. Wrap each apple wedge in 1 piece of crescent roll dough, beginning at eh wide end 
5. Place the rolls seam side down in a buttered 8 x 10-inch baking dish
6. Melt the butter in a medium saucepan over low heat.
7. Add the sugar and vanilla and stir for a few seconds. No need to dissolve the sugar; you want the mixture to be grainy.

{This ingredient is so random Mountain Dew Soda}

8. Pour the butter/sugar mixture evenly over the rolls.
9. Next, Pour Mountain dew soda all over the top. It's look really liquidy and weird.... but no worries It'll all make sense in the end.
10. Finally, sprinkle the top with cinnamon

11. Bake for 40 minutes, or until golden brown.

Serve the dumplings with vanilla or cinnamon ice cream, and spoon on some of the syrup from the bottom of the pan.

My favorite part was the syrup. It was so delicious  I couldn't believe how good it taste. I thought adding the mountain dew was strange but after tasting it I totally understand the pairing of it.

This is going to be my last 'sweet' recipe for a very long, long time, so enjoy!

Quesadillas De Camarones

I absolutely love Ree Drummond! If you don't know who The Pioneer Woman is then you have been living under a rock Lol! She started off as a Blogger to then, having her own show on the Food Network. One thing I love about her the most is her recipes are always step-by-step picture tutorials. She makes it so easy to follow along. I wanted to cook something easy and with under 5 ingredients last weekend. I knew quesadillas De Camarones would be perfect because it has shrimp inside and Quesadillas are a family favorite of ours.

Quesadillas De Camarones
"Shrimp Quesadillas"

2 tablespoons olive oil
2 pounds large Shrimp, peeled and deveined, tails off
Salt to taste
1 large onion, cut in half and then into slices
 (I don't eat onions so I didn't use one but your more then welcome to)
2 1/2 cups grated Monterey Jack Cheese
 7 ounces Enchilada sauce
1 Yellow bell pepper
1 Red bell pepper 
1 Green bell pepper
12 large Flour Tortillas
6 tablespoons butter, for frying

Step 1: Heat 1 tablespoon olive oil in a large skillet over a high heat. Toss in the shrimp.

Step 2: Toss around and cook until the shrimp are opaque, about 5 minutes. Sprinkle with salt and reduce heat to low.

Step 3: Pour Enchilada sauce over the shrimp.

Step 4: Stir around and allow to simmer for a couple of minutes.

(I apologize about no pictures for steps 1 through 4. I completely forgot to take pictures)

Step 5: Remove the shrimp from the skillet and begin to chop it into chunks. Set aside for a bit.

Step 6: Chop bell pepper strips

Step 7: In a separate skillet, heat the remaining 1 tablespoon olive oil over high heat. Throw in the Bell peppers and cook for 3 to 4 minutes, or until the peppers have a few dark brown/black areas.

Step 8: Reomove the peppers from the skillet and set them aside.

Step 9: Sizzle 1/2 tablespoon butter in a skillet over medium heat and lay a flour tortilla in the pan. Cover with the grated cheese.

Then cover the cheese with peppers...

Then add the chopped shrimp on top of the peppers.

Step 10: When the tortilla is golden, top with a second tortilla and carefully flip the quesadilla to the other side. 

Repeat with the remaining tortillas and filling.

Step 11: Cut each quesadilla into wedges and serve with pico de gallo, sour cream, or guacamole.

All done!

I made a whole tray full of quesidallas for the whole family :0) Everyone loved them but Princesses (she said she only wants the old ones I use to make Lol)

Busy, Busy Weekend

We had a very busy, busy weekend! With a lot to do! Our busy weekend actually started Thursday  we both got paid so you know what that means... Bills, Bills, and more Bills. Lol We had to pay a couple of bills and run some errands. Thursday, We went to walmart because I was so excited to make some homemade laundry detergent. To my surprise walmart had nothing I need. I was shocked walmart usually has everything. Shocked and I'm not going to lie I was a little bummed :(

So I just brought some regular detergent and some cleaning supplies. After our Walmart trip we set out to Jack in the Box. Since we only eat fast food once a month we wanted to try something new so we had the Jack in the Box Hot Mess burger and boy it was Hot! Lol It was good but hot. After making it home we knew we had to work off that burger and fries so we changed into our workout clothes and headed to the gym. So me, DJ, my sister, Niqua, and our cousin Brandee all went to the gym.

Saturday Morning consist of grocery shopping. I still cant believe I went over at the grocery store. My goal every month is to only spent $200 that's our budget and I end up spending $227. I went over $27. I'm usually pretty good at budgeting.

By the time I made it home it was time to go to my secret meeting with Mom and Auntie. Were planning a surprise birthday party next month for my grandma and we've been sneaking off to plan it. I brought the items to start working on her centerpieces.

After my secret meeting I went home to test out a new recipe. For Mom's birthday, DJ and I brought her The Pioneer Women Cook Book. We Love Ree Drummond! You know me I love any recipe that only has 5 ingredients or less, Easy! I picked a recipe called, Quesadillas De Camarones. 

I will share this recipe with you all very soon. They were delicious. I made a whole tray full for of course for my entire family. Grandma, DJ, and Mom loved them. Princess didn't like them at all and my sister took out all the bell peppers :o)

Surprise Breakfast with Princess

My morning was actually quiet today. Our God Son was over for the weekend and he went home yesterday so the house was very quiet. Then I heard a loud knock at my window and I look to see who it is and it's Princess holding a McDonald's bag. She wanted to come over and have breakfast with me.

Awww she's so sweet and thoughtful :0)

We ate Hot Cakes and chatted while watching Princess favorite show Doc Mcstuffins. I'm happy we got some Aunite and Niece time together. 

I loved my surprise breakfast with my Princess :0)

February we did Great but Sick of Chicken!!!

February we ate GREAT! 

We only ate Fruits, Veggies, Chicken Breast, and tons of Salad. I'm so happy we did good in February. We had no junk food (beside's eating Wendy's and some Lay's Chicken & Waffle chips Lol) we didn't drink juice or soda, no sausage or pork, and no sweets. I'm  just so happy we made it a whole 28 days. We made so many changes last month.

  • Adding Salads to every meal
  • Drinking Lemon water and cucumber water everyday! 
  • Add 20-30% more Vegetables to our diet
  • No more late night eating or snack! After me and Teddy ate dinner we didn't eat the rest of the night! I dont know how we did it but we did great!
  • And Started eating breakfast. We eat Egg whites, Turkey bacon, or Oatmeal

Here are some of our Meals in February:

Chicken breast with mushroom sauce, Brown rice, carrots, and salad

 baked chicken with black beans and corn

BBQ baked chicken with mashed potatoes, broccoli and cauliflower 

Fish with brown rice and broccoli and cheese sauce

Chicken breast with brown rice, carrots, and broccoli

Shake and Bake chicken with sweet potato fries and salad

Buffalo shake and bake chicken with broccoli and cheese with salad

Salad with Lemon water

Cooking chicken breast everyday was hard to come up with different ways to cook it. I tired bbq sauce, shake and bake, and mushroom sauce, Chicken gravy, and tons of other things. After eating so strict in February, March I'm going to add more vertity of choices for us because I don't know if I can keep eating chicken breast for another month because I'm sick of eating chicken! Lol
