Happy Birthday Auntie Dee Dee

For Auntie Dee Dee's birthday this year my Mom and Auntie Tonia {her two best friends} took her to How Sweet the Sounds and they then all went out to eat at Roscoe's Chicken and Waffles. Mom said they had so much fun. We all were unable to go this year but next year I'm defiantly going to get our tickets early.

{Recipe} Teriyaki Chicken

Ever since I found out Lawry's makes Marinades I've been hooked. My favorite is the Teriyaki with Pineapple juice. My husband is probably tired of eating Teriyaki Chicken since I cook it so much. The other day I decided to cook my world famous Teriayki Chicken. Yeah right world famous! Ha But to my Teddy it's world famous and that's all that matters. Cooking for your family is easy, but when you get married its a little nerves cooking for your man. I remember the first time I cooked for DJ he loved it! Whooo! I was so happy, so I didn't want to stop cooking for him. I started cooking everyday. I'll never forget the first thing I ever made DJ. I made him Blueberry stuffed French Toast with Eggs, Sausage and Bacon. All he could say was, "The Bomb".

Teriyaki Chicken

Ingredients:
a Package of Chicken 
{I normally use Boneless Chicken Breast}
Mustard
Lawry's Marinade Teriyaki 
Lawry's Seasoning Salt
McCormick Garlic Powder
McCormick Onion Powder


1. Start by washing off the Chicken 

2. Season the Chicken with any seasons of your choice

3. After seasoning the chicken now it's time to place mustard all over the chicken

Now here's the fun part me and Princess love. The MESSY Part!
4. Rub the mustard all over the chicken. Making sure it is all coated.
{I use the mustard to cut some of the sweetness from the teriyaki sauce and I always use mustard when seasoning any kind of chicken}

5. Now add the Teriyaki sauce all over the chicken

6. Make sure all the chicken is covered with teriyaki sauce.

7. The chicken should look like this

8. Now place the chicken in a pan, cover with foil and bake at 350 degrees for 1 hour


After cooking the chicken for a little over an hour it's finally all done!

Our 1 year Anniversary

A year ago today I married my best friend aka My Teddy. I call DJ my Teddy because he a really big guy and can look intimidating but he really is a Big Teddy Bear. He truly understands me and knows how to make me feel like the most important person in the whole wide world. I was so grateful and felt honor that he asked me to be his wife. DJ proposal to me in July 2011 and we got married September 24, 2011. I know what a quick engagement, Right! When we got engaged I planned a HUGE to die for wedding.  I wanted a 1950's Old Hollywood themed wedding with a long red carpet, Black and white photos everywhere of us, Sexy Red lipstick, a super long weave, like down to my butt weave. I wanted everything to be super over the top. Then my Great-Grandma aka Granny got really sick and her wish was to see me get married before she passed away. So, we were only engaged for less than 2 months. Yes, I had to months to plan a small wedding. We had a intimate family wedding and we definitely plan on having a Big wedding one day.

I'm so thankful for DJ not only because he makes me feel amazing but because he puts up with me lol there's no way I could ever ask for a more better husband.

For our Anniversary I knew exactly the perfect date. My husband, DJ is from Zwolle, Louisiana so he hasn't experienced a lot of things so I definitely been trying to open him up to a lot of new things. It's so fun because he enjoys trying new things. DJ has never been on a picnic nor has he ever eaten in a park, so I thought a Picnic in the Park would be so different and a little romantic.

{Recipes} Beer BBQ Chicken

Sandra Lee's Beer BBQ Chicken is a family favorite in my home. My mom found the recipe a year ago and everyone is always requesting it. So the other day, Teddy aka DJ said he wanted some Beer BBQ Chicken.

1 Problem = No Beer or Barbecue sauce

We don't keep beer in our house at all, but we always keep a bottle of Sweet Baby Ray's bbq sauce. To my surprise we had no bbq sauce :0( My Auntie Tonia who is our next door neighbor said she had some bbq sauce and I'm going to be honest I don't like using anything other than Sweet Baby Ray's bbq sauce and on top of that the bbq sauce was red! I wasn't feeling it at all, but the things you'll do for love because my baby Teddy really wanted some. Next step was getting a beer. I've never actually went to the store and brought beer before and it felt so weird being 26 years old and getting carded. Lol I've never got carded before for buying anything to drink, so it felt different.

Okay enough chit chat I'm pretty sure ya'll want to know the recipe.

BEER BBQ CHICKEN

Ingredients:
House Seasoning (use whatever seasoning you normally use)
1 teaspoon canola Oil
1 cup of Beer
Package of chicken Thighs or Breast
1 Bottle of BBQ Sauce

1. The first thing I did was wash the chicken thighs and seasoned them.

2. Next, I use 1 tsp of Oil and place in the pan. I let the oil get alittle hot then I place the chicken in the skillet.

3. Then I rotated the chicken over and over until it's brown on both sides.

4. After I brown the chicken on both sides I then place the chicken in a crock pot.

5. Now add the whole bottle of bbq sauce to the crock pot.

6. All of the chicken should be coated like this.

7. Next, Add 1 cup of Beer

8. Pour Beer in the crock pot over the bbq sauce. 

After you pour the beer your all done. You don't have to mix anything or even watch it. Let it cook for 4 hours on High hear and it's done.

Parmesan Cheese Mashed Potatoes
Mixed Vegetables  
notice my small helping of mashed potatoes I'm trying to avoid starches. Bread, Rolls, Mashed Potatoes, and Pasta are my weakness so I'm definitely trying to stay away from them if I to want lose any weight. 

To honest the bbq sauce was not all that great either, it had a sour taste to it. I'm for sure going to stick with my Sweet Baby Ray's bbq sauce the next time.

{Sundays} September 16, 2012

Sundays are always fun. We go to church on Sundays and after church we stop at 7 Eleven and get drinks. We normally don't stop at 7 Eleven after church until the summer time comes. On Sundays after Church we use to have Sunday night dinner and it use to be the most funniest times ever. Me and Mom would cook dinner and Niqua is the one who usually picks out a movie. But when the weather gets hot Mom doesn't too much like using the oven lol but man do I miss Mom's Sunday dinners. But I know when the weather gets back cooler I can just smell the sweet smell of cornbread, chicken, and cabbage. What can I say I'm a southern girl at heart I love cabbage and cornbread. Lol ;0)

After church Princess stopped the Ice cream and I got me and her some yummy fruit Popsicle. 
These fruit Popsicle are amazing they have real chucks of Strawberries in them. Delicious!!!   



Princess didn't like the chucks of strawberries in the Popsicle so she gave her's to "Uncle BJ". It so cute my Princess and Warrior still can't say DJ so they call him BJ.

{Recipe} Sopapilla Cheesecake Squares

Sopapilla Cheesecake Squares

Ingredients:
2 (8 oz.) tubes refrigerated crescent rolls
2 (8 oz) packages cream cheese, softened
1 cup white granulated sugar)
1 tsp. vanilla extract
1/2 cups butter), melted
1/4 cup granulated sugar
1 1/2 tsp. ground cinnamon
Confectioners Sugar, optional

Step 1: Preheat oven to 350 degrees and lightly spray baking dish with nonstick cooking spray

Step 2: Unroll one crescent roll dough into the baking dish, pressing seams together

Step 3: In a bowl, blend cream cheese, sugar, and vanilla together until blended

Step 4: Spread the cream cheese mixture over the crescent roll

Step 5: Place the remaining crescent roll dough on top of cream cheese mixture

Step 6: Place melted butter, cinnamon, and sugar on top

Bake for 30-40 minutes or until golden


The recipe called for 1 1/2 tsp of cinnamon but I did not like how dark the cinnamon made it look. Next time I'm going to only use 1 tsp of cinnamon.

 
Princess loves to help me cook. She wants to stir everything.

I got the recipe from Sandra Lee's Magazine and it was suppose to be a dessert dish at my birthday dinner, but we ran out of time and I promised the family I would cook it Sunday. 


Everyone really liked it and it's something I can see myself making again.
